Oh yes! Kogi Korean Beef short-rib tacos at Garbo’s Grill
It sounds so easy: Marinated beef short rib, Napa cabbage, scallions, carrots, daikon, citrus soy dressing, and Sriracha but it’s the secret knowledge of how to combine these simple ingredients that makes a Korean taco what it is… freaking delicious. Eli and Kenna Pancamo, the founders of this 5×8 foot shiny silver food truck, know the subtle balance to create dishes your taste buds will long for. Starting with the aforementioned Korean BBQ taco, to Yum Yum Shrimp Burritos (mango ginger habanero glazed shrimp, served either cayo style, or korean style), a umami burger or a crazy kogi hot dog (all beef hot dog, homemade kimchi, sesame mayo, fried cheese-cabbage, scallions, carrots, daikon, citrus soy dressing, and Sriracha), these divine concoctions never fail to hit the spot.
It’s a great place to hangout and you’ll never fail to meet people who are usually waiting in line for bit,just like you.
This place is very easy to spot, just look for the war machine poignantly named Mr. Bomber Van Sharkson – painted by local artist Rick Worth. This van will light the way to better times and fuller stomachs.
Verdict:
Eli and Kenna put all their talent and probably lots of hard work into this food truck and they’ve done a wonderful job. Go Garbo!
