It’s time for some tasty grub at Cheese Board Pizza Collective
As we approached the Cheese Board Pizza Collective, we sighed – another restaurant, another line… we start with this, because you might arrive and see 30 to 40 people waiting, turn around and go somewhere else, but don’t. We barely waited five minutes and it was totally worth it. Next door is a bakery and cheese shop (definitely worth checking out) and they create ONE daily pizza for everybody (not literally one pizza, but one style) … no ifs, ands or buts, just one pizza. Regulars told us it’s inspired each and every time and it certainly relieves you of the pressure of choice. Since it’s a workers’ collective, a lot of minds go into deciding what’s tasty… yes it’s a little restricted, but trust us, they know what they’re baking.
They back up the experience with a live jazz band playing tunes for you while you eat. There’s also this incredible green sauce (various herbs – we definitely tasted cilantro) on each table in a recycled ketchup bottle. Together, the place creates a laid back and welcoming atmosphere in which to devour the goods.
To get back to the 40 people in line: The pizzas are baked every other second so it sums up to 5 min waiting time for a freshly baked organic pie. We think that’s quite an achievement.
The collective serves all-vegetarian pizzas with a sourdough crust and one or more of their unusual cheeses to seal the deal. Toppings range from simple Roma tomatoes, to zucchini and feta, or roasted butternut squash and parsnips, baby kale, mozzarella and Comte cheeses. The pizza’s are not the most beautiful we’ve ever seen, but the cheese choices and sourdough give it a unique taste you won’t find anywhere else. The Verdict: This worker’s-owned shop makes awesome pizza so quickly, we were surprised at how fast we got to order. Wholesome cheesy goodness with fresh veggies and herbs munched to low-key jazz made our afternoon. We’ll be back.
